Nutrition Services/Cafeteria Assistant

The National School Lunch Program is a federally assisted meal program operating in public and nonprofit private schools and residential child care institutions. It provides nutritionally balanced, low-cost or free lunches to children each school day. This combined food service course provides students training for employment in the food service industry/cafeteria, school cafeteria setting. Students acquire skills as a cafeteria assistant, pantry cook, station cook, clerical worker, cashier, server, server dishwasher, and restaurant beginner entry cook. Students may progress through levels of units within the curriculum. Skills are presented in a sequence of increasing complexity, gaining knowledge with each unit building upon the preceding level.

Culinary Arts Food and Sanitation (Food Handler’s Card)

This course is offered for all students who want to gain their San Diego Food Handlers Card. This license is the only one accepted for students in our SUHSD adult education culinary courses. Students enrolled in SUHSD culinary courses must prove possession of this license no later than the second week of the semester. Failure to show proof will result in the student being dropped from the culinary training.

This training is also offered for parents and staff of schools who need the SD County licenses to participate in fundraisers around the county where they will serve and /or sell food to help raise money for student organizations.

Culinary Arts:  Breads, Pastries, Desserts and Cakes (cc)
VA Approved Course

Introduction to baking, decorating and serving of attractive pastries, cookies, breads, rolls, pie crusts, and other desserts. This course also covers an introduction to chocolate tech­niques. Course emphasis is on the application of professional level cake design, wedding cakes, tiered cakes and decorations. Highlights all aspects of effective bakery management.

Culinary Arts: Pastry /Cake Designs, Chocolate & High End Decoration Techniques (cc)

VA Approved Course

This course focuses on high-end decoration and chocolate techniques. You will continue to build on your designing techniques increasing in skill and speed to produce professional level cake designs, wedding cakes, and chocolate decorations.
