Nutrition Services/Cafeteria Assistant (NEW for 2018/2019)

The National School Lunch Program is a federally assisted meal program operating in public and nonprofit private schools and residential child care institutions. It provides nutritionally balanced, low-cost or free lunches to children each school day. This combined food service course provides students training for employment in the food service industry/cafeteria, school cafeteria setting. Students acquire skills as a cafeteria assistant, pantry cook, station cook, clerical worker, cashier, server, server dishwasher, and restaurant beginner entry cook. Students may progress through levels of units within the curriculum. Skills are presented in a sequence of increasing complexity, gaining knowledge with each unit building upon the preceding level.

The course focuses on developing basic skills to be used in the professional kitchen, the professional bakery and in the food-service industry. Skills are presented in a sequence of increasing complexity, with each level building upon the preceding level.

Culinary Arts Food and Sanitation (Food Handler’s Card)

This course is offered for all students who want to gain their San Diego Food Handlers Card. This license is the only one accepted for students in our SUHSD adult education culinary courses. Students enrolled in SUHSD culinary courses must prove possession of this license no later than the second week of the semester. Failure to show proof will result in the student being dropped from the culinary training.

This training is also offered for parents and staff of schools who need the SD County licenses to participate in fundraisers around the county where they will serve and /or sell food to help raise money for student organizations.

Culinary Arts Professional Chef (cc)

A chef is more than a profession—it’s an art! With more and more people eating out, employment opportunities in the food service industry are increasing. This course prepares individuals to provide professional chef and related cooking services in restaurants and other commercial food establishments. Obtain skills in recipe and menu planning, preparing and cooking of foods, supervising and training kitchen assistants, managing food supplies and kitchen resources, aesthetics of food presentation, and familiarity of a wide variety of cuisines and culinary techniques.

A unique component of our program is “Ellen’s Café”, where you will apply theory and skills in a real dining environment that is open to the public. In addition, this course is articulated with Southwestern College, allowing you to earn college credits  and get a jump start on a college degree.
